These almond bites with chocolate chips are perfect, nutrient-packed road trip snacks. Sweetened only with dates, they’re full of fiber, healthy fats, and even a little protein. This almond bite recipe makes an excellent, healthy snack for adults — and is also fun to make (and eat) with kids! They save us from gas station junk on car trips and overpriced airport snacks. Plus, they don't require heating your oven on already hot days.

Ingredients
- 3 medjool dates
- 1 cup almond flour
- ½ cup coconut flakes
- ½ cup almond butter
- ½ teaspoon cinnamon
- Pinch sea salt
- ¼ cup almond milk
- ½ cup 100% dark chocolate chips
- 1 cup shredded coconut
Directions
- Add the dates, almond flour, coconut flakes, almond butter, sea salt, and almond milk to a food processor and pulse to combine. The mixture should easily form a ball in your hand. If it feels too dry, add more almond milk, 1 tablespoon at a time.
- Transfer the dough to a bowl and fold in the chocolate chips.
- In a separate bowl, add the shredded coconut.
- Use a soup spoon to scoop out roughly 2 tablespoons of the dough and use your hands to form a ball. Then roll the ball in the shredded coconut and add to a plate. Repeat with remaining dough until all is used.
The recipe makes 12–15 almond bites.
